Aged Creamy Cheddar Shells

BE STILL MY HEART.  As many of you know, my favorite food is mac and cheese, especially when it is done well. This dish still makes me weak.

Whisk desired cheeses into warmed heavy whipping cream on a medium low heat.  Then, fold in shells that have been slightly undercooked. The noodles will continue to cook into the warm melty cheese mixture.

Here, the pièce de résistance is an aged cheddar peppered with grainy mustard that cuts through the richness of the heavy cream, smoked gouda, creamy mozzarella, and colby jack cheeses. IMG_3907.JPGimage1 (22).JPG
