Everything But The Kitchen Sink Sandwich

Sometimes you just gotta dig into your fridge and make dinner happen.  Aka, make a sandwich and throw a fried egg on it.  That’s exactly what I did yesterday when I got home from work and realized I did not have the ingredients for crispy chicken chipotle tacos. I shortly came to the realization that I was not driving to the market and tortillas were not going to magically appear anytime soon.

Here is how its made. First, toast up an english muffin. Then pile on chicken tenders, crispy prosciutto, cheddar cheese, avocado, tomato, red onion, and top with a fried egg. BAM, dinner!

I was trying to decided between “white trash” sandwich and “everything but the kitchen sink” sandwich, clearly, the latter of the two won because there’s prosciutto…. and prosciutto is FANCY af.

Of course, there are a billion different variations you can do here. So, don’t be scared to dig into your fridge and combine the flavors that you enjoy!

      Thanks!! I must say I was a little worried about everything immediately sliding out on the first bite.. but the english muffin is a perfect little spongey vessel to hold it all together… highly recommend.
